A fantastically versatile curry paste made from a blend of fresh herbs and spices using the wonderful addition of tamarind, which gives the paste a delicious tang with a zingy undertone, and wholegrain mustard that adds heat, piquancy and sweetness.

Perfect with seafood but the paste itself is vegetarian, so it is just as good with all curries including dhal, stews, marinades, and to add a spicy twist to your own cooking.

    Hi Just received another batch of your lovely pastes and Indian bread. I made a prawn curry for my friend yesterday and every time I passed the pot all day I had to have a spoonful. It ended up ..and I kid you not..that I had to make another batch ready for her arriving in the evening. So delicious. Kay xx

    Cooked king prawn pakora and chicken jalfrezi Saturday night and both were a total success. I took slightly longer with the jalfrezi than I expected but the results spoke for themselves. So much fresher in flavour and didn’t feel I had over eaten after our meal.

    Thank you very much for the recipe for King Prawn Pathia. I am overwhelmed by the speed of your response. I went straight to the kitchen to make it. I added green pepper, green chillies, lemon juice and lots of fresh coriander and it was delicious. I am a lover of Indian foods and cook curries often. From scratch it takes me hours and hours and I end up with enough to feed 10 people, so I tend to keep it to times when I have friends coming for dinner. I don’t like my curry frozen – it loses fragrance and character. Mostly these days I am cooking just for one or two.

    I’ve tried other curry pastes when I’ve wanted a quick curry for one or two, but they just didn’t work. They really needed much longer cooking and needed lots of additions, which defeats the object of using a paste. I have been delighted to find that your pastes really do produce a lovely curry as quickly as you say they will, and with only the addition of the ingredients. I have downloaded your recipe books and am really looking forward to experimenting as I have found to my delight that I can scale down the recipes to suit.
