How to make Tender Slow Cooked Beef Coconut Curry

  1. Sear the Beef: In a large frying pan, heat the vegetable oil over medium-high heat. Season the beef cubes with salt and pepper, then sear them until browned on all sides. Remove and place in the slow cooker.
  2. Build the Curry Base: In the same pan, add the chopped onion and cook until softened. Add Shemin’s Curry Paste along with a splash of water and the Shemin’s Garam Masala, stirring for 2-3 minutes to bloom the spices.
  3. Slow Cook: Transfer the onions and spices to the slow cooker with the seared beef. Add the coconut milk and chopped tomatoes, stirring well to combine. Cover and cook on low for 4-6 hours, until the beef is tender and infused with all the rich flavours.
  4. Finish and Serve: Once cooked, adjust seasoning with salt and pepper. Garnish with fresh coriander and a sprinkle of toasted coconut flakes for an extra touch of flavour and texture. Serve with steamed rice, naan, or flatbread.
