Shemin’s Indian Curry Paste

Our multi-award winning paste will be your new secret when it comes to Indian cooking. 

Ingredients

  • 250g cucumber, halved lengthways
  • 2 nests dried fine egg noodles
  • 2 salad onions, finely sliced
  • 2 x 160g pre-cooked salmon fillets, roughly flaked
  • A good pinch of Shemin’s Chilli Garlic Salt

Dressing:

  • 2 tbsp rice vinegar
  • 1½ tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 1 small clove garlic, finely grated
  • ½ tsp clear honey

How to make Salmon & Chilli Noodles with Chilli Garlic Salt

  1. Crack the Cucumber
    Bring a large saucepan of salted water to the boil. Meanwhile, place the cucumber cut-side down on a chopping board and bash lightly with a rolling pin until it cracks. Roughly chop and mix into the dressing ingredients in a bowl. Set aside.
  2. Cook the Noodles
    Add the noodles to the boiling water, then take off the heat and leave to stand for 5 minutes. Drain, rinse under cold water and shake dry.
  3. Toss & Serve
    Add the noodles and salad onions to the cucumber and dressing. Toss everything together. Divide between two bowls, top with flaked salmon and finish with a good pinch of Shemin’s Chilli Garlic Salt. Serve and enjoy.

Tips:

  • Switch up the protein: Not into salmon? This works brilliantly with cooked prawns, shredded rotisserie chicken, or tofu for a veggie twist.

  • Don’t skip the cucumber smash: Lightly bashing the cucumber helps it soak up the dressing and adds amazing texture. It’s the secret to getting that fresh, crunchy bite.

  • Finish strong with Chilli Garlic Salt: Always sprinkle the Chilli Garlic Salt at the end – it keeps the salt crystals crisp and the garlic punchy. A little goes a long way!
