Uses: Black mustard seeds are a common ingredient in Indian cooking. They are often kept whole and fried in ghee or oil so as to make a flavoured oil, which can be added to beef, pork, ham, chicken, oily fish, and vegetables such as potatoes, leeks, and cabbage, or even poured over a salad.
Try this quick recipe – mix 5 grated carrots with lemon juice, salt and pepper. Fry 1 tbsp of mustard seeds in 2 tbsp of oil and when they start to pop, pour over the carrots and mix well.
