Boxing Day cooking should be easy, comforting, and a little indulgent. This Boxing Day Tikka Masala is all about the sauce — rich, creamy, warming and full of flavour — made using whatever leftovers you have to hand.

Turkey works beautifully, but chicken, lamb, roasted veg, peas or potatoes all slot straight in.

Shemin's Tikka Curry Paste

Shemin’s Tikka Curry Paste is a rich, aromatic Indian-style paste with a warm, rounded flavour and medium heat. Made with fresh garlic, ginger, cumin, coriander, turmeric, fenugreek, and garam masala, it’s beautifully balanced and incredibly versatile. Perfect for creating classic tikka dishes or adding a delicious twist to your favourite recipes.

Ingredients

The base sauce:

  • 2 tbsp oil
  • 1 medium onion, finely chopped
  • 1 pot (100g) Shemin’s Tikka Paste
  • 400g canned chopped tomatoes
  • 200ml double cream
  • A knob of butter (optional)

Add your leftovers (very flexible):

  • 800g cooked turkey (or chicken, lamb, roasted veg)
  • Leftover roast potatoes, diced
  • A handful of peas (fresh or frozen)

How to make Boxing Day Quick Tikka Masala Curry 

  1. Soften the base – Heat the oil in a medium saucepan. Add the onion and cook gently until soft and translucent.
  2. Build the flavour – Add the Shemin’s Tikka Paste with a splash of water. Cook for 1 minute, stirring, and loosen with more water if needed.
  3. Create the sauce – Stir in the chopped tomatoes. Bring to the boil, then simmer uncovered for 10 minutes until rich and slightly thickened.
  4. Add the leftovers – Gently stir in your cooked turkey, potatoes and peas (or whatever you’re using). Heat through carefully — no need to boil.
  5. Finish and serve – Add the cream and butter if using. Simmer uncovered for 5 minutes until glossy and comforting. Serve with Shemin’s Indian Breads.

Tips

Boxing Day Curry Tips:

  • No turkey? Chicken, lamb, roasted veg or even sprouts work brilliantly.
  • Dry leftovers? Add a spoon of yoghurt or a splash of water when reheating.
  • Too thick? Loosen with water or milk.
  • Too thin? Simmer uncovered for a few extra minutes.
