- Heat the oil in a medium saucepan.
- When hot, add the onions and cook on a medium heat until golden brown. Add the chicken pieces and cook until sealed.
- Add Shemin’s Curry Powder with a splash of water, cook for 1 min until fragrant.
- Add the tomatoes, coconut milk and sugar then simmer for 20 mins with the lid on until the chicken is cooked through.
- Check for seasoning and stir in the fresh coriander.
- Serve with Shemin’s Indian Breads and boiled rice.
