Swordfish Curry

Curry in a hurry is what this swordfish curry is! Flavourful and hearty, this was a joy to feast on and so easy to make.

Ingredients

1 tbsp cooking oil
1 medium onion, sliced
100g Shemin’s Seafood Curry Paste
3 medium fresh tomatoes, chopped
700g swordfish, cut into large bite-sized peices
1 handful of fresh coriander, chopped
juice of half a lemon, or to taste

Method

  1. Heat the oil in a pan that has a lid and add the onions and fry until golden brown.
  2. Add Shemin’s Seafood Curry Paste with a splash of water (fill the empty curry paste tub with water and add into the pan) and simmer for 2 minutes.
  3. Add the chopped tomatoes and simmer with the lid on for about 15 minutes or until the tomatoes are broken down and integrated into the sauce. Add a little water if the sauce starts to get dry.
  4. Add the fish and simmer gently until cooked through with the lid on, about 5 minutes.
  5. Add in the coriander and lemon juice, season to taste and serve with rice and / or Shemin’s Indian Breads.
Tips:
  1. You can also use any firm white fish with this recipe like hake, cod or halibut.
