- Heat the oil in a pan that has a lid and add the onions and fry until golden brown.
- Add Shemin’s Seafood Curry Paste with a splash of water (fill the empty curry paste tub with water and add into the pan) and simmer for 2 minutes.
- Add the chopped tomatoes and simmer with the lid on for about 15 minutes or until the tomatoes are broken down and integrated into the sauce. Add a little water if the sauce starts to get dry.
- Add the fish and simmer gently until cooked through with the lid on, about 5 minutes.
- Add in the coriander and lemon juice, season to taste and serve with rice and / or Shemin’s Indian Breads.
- You can also use any firm white fish with this recipe like hake, cod or halibut.
