3. Simmer the Sauce:
Add the chopped tomatoes, honey, salt, and pepper. Simmer on low heat for at least 10–15 minutes, or slow cook it for more intense flavours, stirring occasionally, until slightly thickened.
4. Finish and Serve:
Finish with lime juice and garnish with fresh coriander (if using) .
