Rich, comforting and full of flavour, this Chickpea Butter Masala transforms a few simple ingredients into a wonderfully satisfying curry.

The chickpeas are gently simmered in a buttery tomato sauce with Shemin’s Indian Curry Paste, Shemin’s Garam Masala Spice Blend and a little dried fenugreek.

A final drizzle of warm paprika butter brings everything together beautifully. Serve with fluffy basmati rice and warm Shemin’s Indian Breads for an easy meat-free curry night.

Ingredients

For the Tomato Base

3 medium ripe tomatoes, roughly chopped, approximately 390g, or 1 x 400g tin chopped tomatoes

For the Chickpea Butter Masala

1 tbsp vegetable or rapeseed oil

2–3 tbsp butter

1 large onion, approximately 185g, finely chopped

¼ tsp salt, plus more only if needed

100g Shemin’s Indian Curry Paste, Chilli-Free, Mild, Medium or Hot

2 tsp sugar, optional

1 tsp Shemin’s Garam Masala Spice Blend

1 tsp dried fenugreek leaves, also known as kasoori methi, crushed, optional

¼ tsp ground black pepper

2 x 400g tins chickpeas, drained and rinsed, approximately 480g drained weight

250ml hot water

125ml water, for blending the reserved chickpeas

80ml double cream, or coconut cream for a dairy-free version

2 tbsp fresh coriander, roughly chopped

For the Paprika Butter

1 tbsp butter

A few drops of cooking oil

1 tsp Shemin’s Paprika or Shemin’s Smoked Paprika Powder

To Finish

Fresh coriander

A little double cream, optional

To Serve

Steamed basmati rice

How to make Chickpea Butter Masala (Chole Butter Masala)

1. Prepare the tomatoes

If using fresh tomatoes, place them in a blender and blend until smooth.

Tinned chopped tomatoes can be used straight from the tin or blended first if you prefer a smoother sauce.

2. Cook the onion

Heat the oil and 2–3 tablespoons of butter in a large saucepan over a medium heat.

Add the finely chopped onion and ¼ teaspoon of salt. Cook for 8–10 minutes, stirring regularly, until the onion is soft and lightly golden. Try not to let it become too dark.

3. Build the tomato masala

Reduce the heat to low and add Shemin’s Indian Curry Paste.

Cook for 1 minute, stirring regularly, then add the tomatoes.

Cover and cook over a medium heat for 5 minutes. Stir, partially cover the pan and cook for a further 5–8 minutes, until the tomato sauce has reduced and thickened slightly.

4. Add the chickpeas

Reserve ⅓ cup of the drained chickpeas and set them aside for blending.

Add the remaining chickpeas to the pan with the sugar, if using, Shemin’s Garam Masala Spice Blend and crushed dried fenugreek.

Stir until the chickpeas are thoroughly coated in the tomato masala, then pour in 250ml hot water and bring to a gentle simmer.

5. Thicken the curry

Blend the reserved ⅓ cup of chickpeas with 125ml water until smooth.

Stir the blended chickpeas and black pepper into the curry. Loosely cover the pan and simmer over a low heat for 15 minutes, stirring occasionally to prevent the sauce from catching.

6. Add the cream

Taste the curry and adjust the seasoning only if needed, as Shemin’s Indian Curry Paste already contains salt.

Stir in the double cream and chopped coriander. Cover and cook gently for a further 5 minutes.

If the curry becomes thicker than you would like, loosen it with a small splash of hot water.

7. Make the paprika butter

Place 1 tablespoon of butter and a few drops of oil in a small pan over a low heat.

Once the butter has melted, remove the pan from the heat and stir in the Shemin’s Paprika or Shemin’s Smoked Paprika Powder. Removing it from the heat prevents the paprika from burning and becoming bitter.

8. Finish and serve

Drizzle the aromatic paprika butter over the chickpea curry.

Finish with fresh coriander and a small swirl of cream, if liked.

Serve with steamed basmati rice, warm Shemin’s Indian Breads and Shemin’s Mango Chutney, if using.

Tips

Make it vegan

Replace all the butter with a good block-style vegan butter and use coconut cream instead of double cream. Finish with coriander and a swirl of coconut cream rather than dairy cream. Shemin’s Indian Curry Paste is already suitable for vegans.

Make it with chicken

Replace one tin of chickpeas with 500g boneless, skinless chicken thighs or chicken breasts, cut into bite-sized pieces.

Brown the chicken in the tablespoon of oil at the beginning, then remove it from the pan. Add the butter and cook the onion as directed. Return the chicken to the pan with the remaining chickpeas in Step 4 and continue with the recipe.

Simmer until the chicken is completely cooked through with no pink remaining. Chicken breast may cook slightly faster than thigh.

Adjust the consistency

The blended chickpeas naturally thicken the sauce as it simmers. Add a splash of hot water if it becomes too thick, or simmer it uncovered for a few extra minutes if you prefer a thicker curry.

Fresh or tinned tomatoes

Fresh ripe tomatoes give the curry a lighter, fresher flavour. Tinned tomatoes create a slightly richer sauce and are a reliable choice when fresh tomatoes are not at their best.

Adjust the sweetness

The sugar is optional. Taste the tomato sauce before adding it — you may find that naturally sweet tomatoes do not need it.

Finish the paprika butter gently

Remove the butter from the heat before stirring in the Shemin’s Paprika or Shemin’s Smoked Paprika Powder. This keeps the flavour warm and fragrant rather than bitter.
