Crispy Garlic Tarka Chicken Curry

An easy chicken curry made with Shemin’s Indian Curry Paste, finished with sizzling garlic, cumin seeds and Kashmiri chilli.

 

This Crispy Garlic Tarka Chicken Curry is comforting, full of flavour and still simple enough for a midweek dinner. The curry is made the classic Shemin’s way with onions, Shemin’s Indian Curry Paste, chicken and tomatoes, then finished with a hot garlic tarka just before serving.

 

The crispy golden garlic, Shemin’s Cumin Seeds and Shemin’s Kashmiri Chilli add a final burst of flavour that makes the whole curry feel extra special. Serve with steamed basmati rice, warm Shemin’s Indian Breads and a spoonful of Shemin’s Mango Chutney.

Ingredients

For the Chicken Curry

1 tbsp oil

1 large onion, finely chopped

1 x 100g tub Shemin’s Indian Curry Paste, Chilli-Free, Mild, Medium or Hot

A splash of water

800g boneless, skinless chicken thighs or chicken breasts, cut into bite-sized pieces

400g tin chopped tomatoes

100ml water

Juice of ½ lemon

Small handful of fresh coriander, roughly chopped

Salt, if needed

For the Crispy Garlic Tarka

2 tbsp ghee, rapeseed oil or sunflower oil

6 garlic cloves, thinly and evenly sliced

1 tsp Shemin’s Cumin Seeds

1 Shemin’s Kashmiri Chilli, broken into pieces

To Serve

Steamed basmati rice

How to make Crispy Garlic Tarka Chicken Curry

1. Cook the onion

Heat the oil in a large pan over a medium heat.

Add the onion and cook for 8–10 minutes, stirring regularly, until soft and golden.

2. Add the curry paste

Add Shemin’s Indian Curry Paste with a splash of water.

Cook for 1–2 minutes, stirring regularly.

3. Add the chicken

Add the chicken and stir until thoroughly coated in the paste.

Cook for 4–5 minutes, stirring occasionally.

4. Simmer the curry

Add the chopped tomatoes and 100ml water. Stir well and bring to a gentle simmer.

Cook uncovered for 15–20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened. Add another splash of water if needed.

5. Finish the curry

Stir in the lemon juice and most of the coriander.

Taste the curry and add a little salt only if needed. Keep the curry warm while you make the tarka.

6. Make the crispy garlic tarka

Place the ghee or oil and sliced garlic in a small frying pan over a medium-low heat.

Cook for 3–4 minutes, stirring regularly, until the garlic begins to turn pale golden.

Add Shemin’s Cumin Seeds and Shemin’s Kashmiri Chilli. Cook for another 30 seconds until sizzling and fragrant, then immediately remove the pan from the heat.

7. Pour over and serve

Carefully pour the hot garlic tarka over the curry.

Scatter over the remaining coriander and serve immediately with steamed basmati rice, warm Shemin’s Indian Breads and Shemin’s Mango Chutney.

Tips

Watch the garlic carefully

Remove it from the heat once golden. It will continue to darken in the hot oil and can become bitter if overcooked.

Use ghee or oil

Ghee gives the tarka a rich, buttery flavour, but rapeseed oil or sunflower oil also work well.

Using chicken breast

Chicken breast works well but may cook slightly faster than thigh. Check it after 12–15 minutes of simmering to avoid overcooking.

Make the tarka last

The curry can be prepared in advance, but make and pour over the tarka immediately before serving so the garlic stays crisp.

Adjust the sauce

Leave the curry uncovered for a thicker sauce, or add a splash of water if you prefer more sauce.
