Tandoori BBQ Beef Short Ribs

Rich, tender beef short ribs marinated in Shemin’s Tandoori Spice Blend, slowly cooked until soft, smoky and beautifully charred.

 

These Tandoori BBQ Beef Short Ribs are a proper showstopper. The beef is marinated with Shemin’s Tandoori Spice Blend, yoghurt, garlic and lemon, then slowly cooked until the meat is tender, juicy and starting to fall away from the bone.

 

Cook them on the barbecue for a smoky summer feast, or make them in the oven for an easy, comforting dinner at any time of year. Finish with an optional Mango Chutney glaze for glossy, sticky, caramelised edges that make them seriously hard to resist.

 

Serve with cooling mint yoghurt or raita, fresh lemon and plenty of napkins.

Ingredients

For the Beef Short Ribs

4 meaty bone-in beef short ribs, approximately 250–300g each

3 garlic cloves, crushed

2 tbsp Shemin’s Tandoori Spice Blend

4 tbsp Greek yoghurt

2 tbsp olive oil

1 tbsp lemon juice

½ tsp fine salt

For the Optional Sticky Glaze

2 tbsp Shemin’s Mango Chutney

1 tbsp water

1 tsp lemon juice

To Serve

Mint yoghurt or raita

Fresh lemon wedges

Salad, Indian breads or barbecue sides

How to make Tandoori BBQ Beef Short Ribs

1. Make the marinade

Mix the garlic, Shemin’s Tandoori Spice Blend, Greek yoghurt, olive oil, lemon juice and salt in a bowl.

2. Marinate the ribs

Rub the marinade all over the beef short ribs, making sure they are well coated.

Cover and refrigerate for at least 2 hours, ideally overnight, to let the flavour develop.

3. Bring the ribs closer to room temperature

Remove the ribs from the fridge approximately 30 minutes before cooking.

To cook on the BBQ

4. Cook the ribs

Set up a lidded barbecue for indirect cooking at 135–150°C. Brown the ribs briefly over direct heat, then move them to a foil tray on the indirect side. Cook for 1 hour, then cover tightly with foil and cook for another 1½ to 2 hours, until tender.

5. Add the sticky glaze

Mix the Shemin’s Mango Chutney, water and lemon juice. Brush over the ribs and cook uncovered for a final 10–15 minutes, watching carefully so the glaze does not burn.

To cook in the oven

4. Slow cook the ribs

Heat the oven to 160°C / 140°C fan. Place the ribs in a roasting tin, cover tightly with foil or a fitted lid, and cook for about 3 hours, until very tender.

5. Add the sticky glaze

Brush over the optional Mango Chutney glaze, increase the oven to 200°C / 180°C fan, and cook uncovered for 10–15 minutes, until glossy and lightly caramelised.

Rest and serve

6. Rest before serving

Rest the ribs for 15 minutes, loosely covered with foil. Serve with mint yoghurt or raita, fresh lemon wedges, salad, Shemin’s Indian Breads or your favourite barbecue sides.

Tips

Marinate overnight if you can

A longer marinade gives the Shemin’s Tandoori Spice Blend more time to flavour the beef.

Cook low and slow

Beef short ribs need time to become tender. Keep the heat gentle and let the ribs cook until the meat softens properly.

Check tenderness, not just time

The ribs are ready when a skewer or knife slides easily into the thickest part of the meat.

Glaze near the end

Mango Chutney can caramelise quickly, so brush it on for the final 10–15 minutes only.

Use a lidded barbecue

Indirect heat and a closed lid help the ribs cook slowly and evenly.

No barbecue?

The oven method works beautifully and still gives you rich, tender, tandoori-spiced ribs.

Serve with something cooling

Mint yoghurt, cucumber raita or plain yoghurt with lemon works really well with the smoky, spiced beef.
