Peri Peri is a spice that hails from Portugal but is popular all over the world thanks to one famous chicken fast food chain. This Peri Peri chicken is a quick and tasty tray bake – easy to make and easy to wash up afterwards!

Ingredients

  • 550g Boneless chicken thigh fillets
  • Olive oil for roasting
  • 2 Red or yellow peppers, cut into rough 2cm pieces
  • 1 Large red onion or 2 medium, peeled and cut into wedges
  • 250g Cherry tomatoes
  • 1-2 Fresh red or green chilli sliced (optional)
  • 1 tbsp Shemin’s Peri Peri Spice Blend
  • 2 tsp Crushed garlic
  • 1 tbsp Red wine vinegar
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Olive oil
  • Juice of 1 lime to taste

How to make Peri Peri Chicken Bake

  1. Preheat the oven to 220°C / Gas Mark 7. Coat the chicken thighs lightly with olive oil and season with salt and pepper. Place in a roasting tray and bake for 15 minutes.
  2. Whilst cooking make the Peri Peri sauce by combining the chilli, Shemin’s Peri Peri spice blend, garlic, red wine vinegar, Worcestershire sauce and olive oil. Add lime juice to taste.
  3. Remove the chicken from the oven. Take the chicken from the tray, and set aside. Now add the peppers, onion and tomatoes to the same tray and coat in half the Peri Peri marinade and the juices from the chicken. Place the chicken on top of the vegetables and brush the rest of the Peri Peri sauce over the chicken.
  4. Roast for a further 20 minutes and serve immediately with extra lime juice to taste.
  5. Great with sweet potato wedges.

Tips

Tip: To make this dish Slimming World friendly, simply coat the chicken thighs in Fry Light spray oil and make the Peri Peri sauce with no olive oil.
