Ingredients

1 tbsp oil
1 onion, roughly chopped
4 medium potatoes, cut into chunks
1 medium cauliflower, cut into florets including the stem
1 tsp garlic
1 tsp ginger
1 tbsp Shemin’s Harissa Spice Blend
800ml stock
2 tbsp at creme fraiche

How to make Cauliflower and Harissa Soup

Heat 1 tbsp of oil (or spray oil) in a big pan and fry your onion until brown.
Add your potatoes, cauliflower, garlic, ginger and Shemin’s Harissa (or Peri Peri) Spice Blend. Stir for a few minutes.
Pour in the stock and bring the soup to the boil. Cook until the ingredients are tender and then blend until smooth.
Add a couple of tbsp creme fraiche and season to taste.
