Cauliflower and Harissa Soup

A super quick, delicious, warming and very healthy meal to make that is full of flavour. Perfect!

Ingredients

  • 1 tbsp oil
  • 1 onion, roughly chopped
  • 4 medium potatoes, cut into chunks
  • 1 medium cauliflower, cut into florets including the stem
  • 1 tsp garlic
  • 1 tsp ginger
  • 1 tbsp Shemin’s Harissa Spice Blend
  • 800ml stock
  • 2 tbsp at creme fraiche

Method

  1. Heat 1 tbsp of oil (or spray oil) in a big pan and fry your onion until brown.
  2. Add your potatoes, cauliflower, garlic, ginger and Shemin’s Harissa (or Peri Peri) Spice Blend. Stir for a few minutes.
  3. Pour in the stock and bring the soup to the boil. Cook until the ingredients are tender and then blend until smooth.
  4. Add a couple of tbsp creme fraiche and season to taste.
Serves 4
