Grilled Cajun Salmon with Sage

Salmon makes the perfect meal, easy to prepare and healthy. Try this delicious recipe any night of the week for a no-stress dinner.

Ingredients

  • 4 salmon fillets, preferably with skin on
  • 1-2 tbsp Shemin’s Cajun Spice blend
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 4 tbsp fresh sage, roughly chopped
  • squeeze of fresh lime/lemon

 

Method

    1. Pat the salmon fillets dry with a paper towel and arrange them in a baking dish in a single layer. Mix Shemin’s Cajun Spice Blend, 2 tbsp olive oil and garlic in a small bowl. Rub the mixture on the salmon fillets. Cover the baking dish and marinate the salmon for 1-3 hours in the fridge.
    2. When ready to cook, remove fish from the fridge. Heat the grill or BBQ. When hot, cook the salmon for 4-5 minutes. Turn the fish over cook the other side for 3-4 minutes or until cooked through. Whilst the salmon is cooking, heat up 1 tbsp olive oil in a pan and fry the fresh sage until crispy.
    3. When the fish is done, squeeze over some fresh lime and the crispy sage.

TIP: This also tastes great pan-fried. If you’re doing this then you can cook the sage in the same pan as the salmon. Use spray oil for a zero syn version if you are on slimming world.
